CHARACTER AND TASTING NOTES
Sparkling Rosé The freshness of this light flesh tint colored with fine, even bubbles. Full cherry and red fruits on the nose. On the palate, bubbles reveal ripe strawberries aromas. Elegant and refreshing, this sparkling wine give a great and instant pleasure. Serve chilled (8°C to 12°C). Drink within a year after purchase to preserve original aromas. Best served for aperitif, it pairs well also with spicy meals, bouillabaisse or garlicdishes.
TERROIR
This old vineyard is planted in calcareous rock soil. The low yield parcels lie at the foot of the Loubemountain in the higher portion of the property. Abundant sunshine with a quasi continental microclimate.

Traditional supervised controls are used with frequent toiling on each parcel and organic fertilizer distributed over all parcels.
WINE-MAKING
Nocturnal harvest is done in order to take advantage of the lower temperature and to prevent oxidation. Crop sorting, destemming and short contact with skin during maceration. Fermentation at low temperature. The second fermentation happen in the bottle by addition of Liquor(“Méthode traditionnelle”). The winebecomesparkling. The temperature raising again, wine started “bubbling” over barrels or exploding bottles. It inspired the “ancestral” method consisting in bottling the fermentation with the right quantity of natural sugar to avoid over pressurisingduring the second fermentation. The “traditional method” use the same fermentation in bottle with the addition of a calibrated quantity of liqueur.
