PRESENTATION AND ELABORATION OF WINE
The DOMAINE VALFONT AOP rosé wine Coteaux d'Aix en Provence comes from the estate located east of Lambesc. The domain, belonging to the Castinel family for more than 50 years, is made up of 27 hectares of vines divided into AOP Coteaux d'Aix en Provence and PGI, as well as a few hectares of olive trees. The mechanical harvest is practiced in the area from the end of August at night, to preserve the grapes heat. The vines are destemmed, then one part undergoes a direct pressing while the other part macerates from 7 to 8 hours at low temperature between 7 and 8 ° C. Then, the whole of the harvest is assembled in stainless steel vats, in which a static settling is practiced. The fermentation lasts about 8 – 10 days at low temperature (14 °), which allows a good conservation of aromas. The DOMAINE VALFONT rosé wine expresses perfectly in the 2 years following the harvest.
