The chestnuts are harvested by hand in the Alta Rocca region located between 800 and 1000 m above sea level, from late October to mid-November. The liqueur is made from a mixture of steamed chestnuts and raw (hand-peeled) macerated, with a hint of vanilla. Maceration lasts between 5 to 6 months.
