Principle: 100% traditional grapes, 15 hl / ha maximum, grazing the over-maturity, macerations pushed to the extreme and barrel aging.
For gourmet meals.
- Vineyard: From a north-facing plot of light and light orange clays.
- Grapes: Vermentino
- Harvest: 3 grape harvests in green and 2-3 passages in maturity, the choice of bunches is done at the sight, when they begin to tinge with orange reflections, which will assure us tannins for the guard.
- Vinification: Pellicular maceration, then aged in oak barrels (9 months aging)
- Tasting: we find the characteristics of vermentino (white vecchio) on citrus notes etc ..; but to this is added acacia honey from pineapple, smoked, peat, fat and an incomparable length.
