A characteristic flower considered as the symbol of summer, the sunflower blooms in June and July; cultivated species, it is widespread in crops mainly in agricultural areas of the Tuscan coast. It is recommended to accompany it with fresh cheeses: pecorino or fresh ricotta. Physical state: crystallizes rapidly, compact mass with large crystals. Color: very characteristic with a bright yellow shade. Odor: Light moist grass of medium intensity. Taste: normally mild, refreshing.
